Garri, also known as “cassava flakes” or occasionally tapioca, is a staple food in West Africa made from cassava tubers. At DabuchiAgro, we specialize in processing, packaging, and exporting both yellow Garri and Ijebu Garri.

Varieties of Garri

  1. Ijebu Garri:
    • Origin: Produced primarily by the Yoruba people of Ijebu origin in Nigeria.
    • Taste: Known for its pleasantly sour taste.
    • Uses: Ideal for soaking and drinking as a cereal.

Processing:

  • Cassava tubers are peeled, washed, and grated or crushed to produce a mash.
  • The mash is optionally mixed with palm oil and placed in a porous bag.
  • The bag is then placed in an adjustable press machine for 1–3 hours to remove excess starchy water.
  • The resulting product is sieved and fried, resulting in a dry, creamy-white granular product.
  1. Yellow Garri:
    • Appearance: Granular and dry with a creamy-white color.
    • Processing: The roots are fermented, mashed, sieved, and then fried before packaging.
